Salmon Tacos with Cabbage-Red Onion Slaw & Simple Guacamole

My boys love tacos!  Well, Christian loves tacos and Alexander loves the taco shells!  The typical ground beef tacos are great, but we've been stepping outside the box and trying some new ideas.  Last week we tried Salmon Tacos with Cabbage-Red Onion Slaw and a Simple Guacamole.  Both boys literally jump up and down when they heard that it was "Taco Night".  Cabbage-Red Onion Slaw I made the slaw the night before.    I thinly cut 1 cup each of cabbage and red onion.       Tossed together and add a few canned chili peppers.  The recipe originally called for habenaro, but we couldn't find any.       Added the juice of 2 limes.   Tip:   Rolling the lime on the counter top with a little pressure  makes it easier to extract the juice once you cut it.     1 cup Thinly Sliced Cabbage 1 cup Thinly Sliced Red Onion 1/4 of On...

Do you have a picky eater?  We sure do!  Our youngest, Alexander, is three and is a super picky eater.  I've been working on getting him more involved in the prep/cooking process in an attempt to get him more interested and therefore eat better.  Today we made tortilla wraps for lunch: Alexander loves mustard!  He spread it all over his tortilla.   Then he added his favorite... Macaroni-Cheese Han and of course some Cheese Then he rolled it up... all by himself!  He's such a big boy!  :) And he ate the whole dang thing!  Success!!

Blueberry Cheesecake Smoothie

My boys seem to be catching on to the healthy choices.  Tonight they were begging for a smoothie.  I used the new Magic Bullet Single Shot that Christian gave me for Christmas.  It's awesome!  Christian wanted a Strawberry Cheese Cake and Alexander wanted Blueberry Cheese Cake Smoothie.   Both were delicious...  so delicious that I had to make a blueberry one for myself.  :) Blueberry Cheesecake Smoothie   (adapted from a U Weight recipe) 1 cup Milk 1/2 cup Frozen Blueberries 1 1/2 tbsp Cream Cheese 1 tsp  Splenda 1 tsp Vanilla Extract 4 Ice Cubes

Grilled Cheese - Avocado Style!

OMGosh!  Christian had the most  terrific idea for supper tonight -  Avocado Grilled Cheese Sandwiches!   YUM!! He had recently seen them on a commercial and just had to try it.  Luckily we had stocked up on avocados our last grocery trip (1) for Super Bowl Guacamole and (2) because they are a super food and I want to include them in our diet more.   So... this evening, we were in the middle of a winter wind storm and just before mealtime our lights started to blink.  I was afraid that we would lose power so we dumped homework and I broke out the frying pan and ingredients.  In a matter of minutes the sandwiches were on the table getting rave reviews from Christian.  I'm so glad that my boy likes avocados.  Alexander, however, just wanted a standard grill cheese.  He thinks avocados are yucky.  I'm sure his taste buds will adjust.
