In an attempt to be more "heart healthy" we plan to add more fish to our diet. Truthfully, the only time we really have fish is when it's deep fried or pan fried. Millard's favorite is catfish, but we can't seem to find any here. Myself and Christian L-O-V-E seafood!! No matter what way it comes to us - we'll eat it!! So you can imagine Christian's excitement when he realized that he was having salmon 2 days in a row. This was such a simple, quick meal to put together . The Salmon was coated with Thai Kitchen Sweet Red Chili Sauce from Costco and baked in the oven at 350 for 20 minutes on parchment paper which made for easy clean-up. Garlic Spinach was also super easy. I sauteed 1 bag of Costco Baby Spinach, 4 cloves of garlic, a little olive oil, a teeny bit of sea salt and pepper to taste.
