After School Snack: Strawberry Smoothie

Each day after school Christian bursts through the door with a raging appetite. Dinner isn't usually served until 5:30/6pm so he needs something to hold him over for a few hours. Many days he'll have a bowl of Quaker Oats or a bowl of cereal. Today I decided to mix things up a little bit... literally! I pulled out the blender and searched for a smoothie recipe that would be easy for him to help make.

Finding just th
e right recipe took a little searching. Most smoothies call for orange juice, but because of Christian's acid reflux I had to strike those ones out. Finally I found the one at FunSchool for a Strawberry Smoothie (recipe below). I got everything ready and laid out on the counter just minutes before he got home, including a print-out of the recipe. The recipe called for sugar, but sugars tend to bother Christian's acid reflux so I went with Splenda.

Strawberry Smoothie
Use your measuring skills for
this kids recipe and create your own fruity smoothie!

What you need:

  • Blender
  • Measuring cup
  • Small bowl
  • 8 - 10 strawberries
  • 1 ripe banana
  • 1/2 cup ice
  • 1/2 cup milk
  • 1 tbsp sugar

Steps:


1. Wash the strawberries in a bowl and peel the banana
2. Pour the milk and the ice into the blender. Add the banana, strawberries, and sugar
3. Parent Alert: Turn on the blender and blend the mix for 1 - 2 minutes.

Christian was really ex
cited to discover that he would be making a fruit smoothie. He washed up and was anxious to get started right away. He read and followed the directions perfectly. He counted and measured carefully. Christian really enjoys getting in the kitchen and helping. This time, apart from mommy using the blender, he did it all on his own. He was one proud boy! The end result was delicious!! Perhaps mommy could've blended it just a tad bit more because we had a couple of chunks of banana left, but it was yummy regardless.

We put a strawberry on a stick and plopped it in the drink to make it look nice. Christian was happy with how it looked.

Now he wants to know what we will make tomorrow. :) He said he wants to make a smoothie everyday. I guess it's time for me to start searching for more recipes.

  1. I love making smoothies!!! I don't like it with milk or yogurt though so I always use OJ which won't help you. But I use all frozen fruit, except for the fresh banana. Frozen strawberries, peaches, and blueberries usually. The kids love it too! I don't add any sugar, just the OJ and the fruit. Any leftovers can be frozen into popsicles also. ;)

  2. I am going to try some Low Acid OJ in some of the recipes over a weekend and see how that works out. Love the idea of making freezie pops with the leftovers. Thanks.

Chocolate Pudding with Strawberries

Today was grocery day.  I shopped the sales fliers and came home with some lovely looking strawberries.  I knew they would go great with the Fat Free Jello Pudding that we already had in the pantry.  I prepared the pudding with 1% milk and spooned 1/2 cup into each dessert dish.  I washed and sliced the strawberries and layered them on top and lastly added a heaping tablespoon of cool whip on top.  A very simple and low fat, low cal dessert and oh boy was it ever delicious!  For dinner we had Pulled Pork Sandwiches with Coleslaw.  We tried Renee's Salad Dressing for the first time tonight and it was very good.  Overall our meal was about 4 carbs which was perfect!  

What is a healthy breakfast?

Ok so I have to admit that breakfast at our household during school days had been very rushed and not so healthy. I would always let Christian pick out the oh so common cereal box that we all see advertised on TV. I'd pour a heap of sugary cereal with 2% milk into a bowl and set it on the table. I've obviously been slacking and taking the easy, unhealthy way out. Breakfast is referred to as the most important meal of the day, but somehow I don't think that a bowl full of sugar is what they are talking about. Breakfast is supposed to refuel my child and help boost his brain power for a busy day at school. Recently I've been making a better attempt to start Christian's day out with a healthier meal. I am keeping on my track of incorporating more fruits and because we have a super-sized box of cornflakes in the pantry I figured we'd have to use them up first.
