Watermelon Salad

What says summer better than watermelon?!  And best of all - the kids love it!  We recently decided to try a water melon salad.  We had always simply sliced the perfect watermelon into wedges. Yes, the perfect watermelon.  According to Millard, "Choosing the proper watermelon involves thumbing the finger on the melon, listing for a thud and feeling for a vibration."  And believe me folks, this sometimes takes a little time.  Myself and Alexander sometimes wander off to continue grocery shopping while Millard and Christian dig through the bin of watermelons.  It can be quite the adventure.

The watermelon salad peeked our curiosity.  The idea of pairing crumbled feta cheese, thinly sliced shallots and fresh mint with watermelon cubes sounded very refreshing.  We followed a recipe, but neither of us really liked it.  We felt that the mint was a little too overpowering.  We will definitely try to make it again, but will probably pass on the mint... or at least reduce the amount we use.

Grilled Honey Mustard Chicken

Made the below recipe for chicken tonight. It was yummy! It has been a long day and I totally forgot to take pictures of the chicken, but I wanted to post the recipe so that I wouldn't loose it. Grilled Honey Mustard Chicken Ingredients 1/4 c Dijon mustard 1/3 c Honey 2 tbs Light Mayo 1 tbs Steak Sauce 4 Chicken Breasts (4oz ea) Directions 1. Preheat the grill for medium heat. 2. Yummy Salad

Salad can get boring so today I got creative... romaine lettuce, a little ranch mixed in with the lettuce... then shredded cheddar, raspberries, grape halves, strawberry, and just a few almonds. A nice fresh salad for a warm day. Yum!

Panini & Potatoes

Now that we`re over the Easter break it`s time to hop right back on track. Monday I really didn`t feel like cooking a real meal so I opted for sandwiches. I made Turkey-Ham-Cheddar-Avocado Panini`s. Normally we`d have potato chips or french fries on the side, but I made smashed potatoes instead that I found on the back of 'Compliments Brand Red Petites Potatoes' Roasted Smashed Greek Potatoes 2lbs red mini potatoes 1 head garlic, peeled 4 sprigs oregano 2 tbsp extra virgin olive oil 1/2 cup crumbled feta cheese 1 tbsp fresh lemon juice Toss raw potatoes together with garlic, 2 sprigs of oregano, olive oil, saltand pepper in a roasting pan. roast in a 400 degree F oven until tender, about 40 minuntes. Transfer to a bowl and lightly smash potatoes. Stir in feta cheese, remaining leaves of oregnao and lemon juice. Add salt and pepper to taste. Serve warm.
