Grilled Drunken Artichokes

I absolutely love artichokes, but I've only ever had them jarred or canned.  I've eaten them directly out of the jar and made various dips with them, but packed in oil or mixed with mayo is not necessarily the healthiest way.  On their own, the artichoke is a low-calorie, nutrient-rich vegetable.  It is an excellent source of fiber and vitamin C, and a good source of folate and magnesium.  It is also a natural source of antioxidants.  

On the hunt to find a healthier way to prepare artichokes, I found this recipe idea at Food.com for Grilled Drunken Artichokes.  I have been excited to test it out for several months.  Last week we ran upon the artichokes on sale 6 for $1.  At that price it was the perfect time to try the recipe out.  We tweaked the recipe to make it our own and using the ingredients that we already had.

The result... delicious!!!!  Christian really, really liked them.  
He even ate one the following day as an after school snack.

I am always looking for new recipes and last month my cousin emailed me the link to Grilled Buttermilk Chicken. I've had fried chicken soaked in buttermilk before, but this was a leaner idea. Chocolate Pudding with Strawberries

Today was grocery day.  I shopped the sales fliers and came home with some lovely looking strawberries.  I knew they would go great with the Fat Free Jello Pudding that we already had in the pantry.  I prepared the pudding with 1% milk and spooned 1/2 cup into each dessert dish.  I washed and sliced the strawberries and layered them on top and lastly added a heaping tablespoon of cool whip on top.  A very simple and low fat, low cal dessert and oh boy was it ever delicious!  For dinner we had Pulled Pork Sandwiches with Coleslaw.  We tried Renee's Salad Dressing for the first time tonight and it was very good.  Overall our meal was about 4 carbs which was perfect!  

What is a healthy breakfast?

Ok so I have to admit that breakfast at our household during school days had been very rushed and not so healthy. I would always let Christian pick out the oh so common cereal box that we all see advertised on TV. I'd pour a heap of sugary cereal with 2% milk into a bowl and set it on the table. I've obviously been slacking and taking the easy, unhealthy way out. Breakfast is referred to as the most important meal of the day, but somehow I don't think that a bowl full of sugar is what they are talking about. Breakfast is supposed to refuel my child and help boost his brain power for a busy day at school. Recently I've been making a better attempt to start Christian's day out with a healthier meal. I am keeping on my track of incorporating more fruits and because we have a super-sized box of cornflakes in the pantry I figured we'd have to use them up first.
