Grilled Buttermilk Chicken w/ Salad



















I am always looking for new recipes and last month my cousin emailed me the link to Grilled Buttermilk Chicken. I've had fried chicken soaked in buttermilk before, but this was a leaner idea.

It was very easy. Saturday morning I arranged the chicken in a shallow baking dish and marinaded them in the buttermilk mixture. I turned them occasionally until dinner time. Then Millard took care of the grilling. They turned out nice. I didn`t use as much garlic as was called for, but perhaps I could`ve.


Grilled Buttermilk Chicken

Serves 8

Ingredients

  • 1 1/2 cups buttermilk
  • 8 cloves garlic, chopped
  • 1 tablespoon paprika
  • kosher salt and black pepper
  • 6 pounds bone-in chicken pieces

Directions

  1. In a small bowl or measuring cup, combine the buttermilk, garlic, paprika, 1½ teaspoons salt, and ¾ teaspoon pepper.
  2. Divide the buttermilk mixture and chicken between 2 large resealable plastic bags. Let marinate in the refrigerator, turning the bags occasionally, for at least 1 hour and up to overnight.
  3. Heat grill to medium-low. Remove the chicken from the marinade (discard the marinade) and grill, covered, turning occasionally, until cooked through, 30 to 40 minutes.

We each made a salad to go along with our chicken. I`ve never had kiwi in a green salad before, but oh boy it was good. Christian got fancy and put a cherry on top of his. :)

  2. Oh it was delicious! The kiwi idea came about by chance. Opened the fridge and there they were... just as well to use them.

One of my favorite foods in the whole wide world is avocado. It's a great thing to love because they have nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins, and folic acid. Greek Pita

Keeping up with healthy eating is not an easy task. We have been eating reasonably well, but it is tough to break old habits. I caved once in the past bit and grabbed Burger King for dinner for the family. This past Friday evening was beautiful and I really didn't feel like attempting some big meal. I had already had thaw ed some boneless, skinless chicken breast and thought that some sort of sandwich would be ideal. We had all the fixin's for a Greek Pita so that's what I did. I love my Wolfgang Puck Panini Maker and use it for almost everything including to grill chicken. I didn't add any seasoning... just threw them on two at a time. I got together all of the ingredients: Whole Wheat Pita Pockets, diced onion & tomato, sliced black olives, feta cheese and lettuce. Grilled Honey Mustard Chicken

Made the below recipe for chicken tonight. It was yummy! It has been a long day and I totally forgot to take pictures of the chicken, but I wanted to post the recipe so that I wouldn't loose it. Grilled Honey Mustard Chicken Ingredients 1/4 c Dijon mustard 1/3 c Honey 2 tbs Light Mayo 1 tbs Steak Sauce 4 Chicken Breasts (4oz ea) Directions 1. Preheat the grill for medium heat. 2. In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat. 3. Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!
