Keeping up with healthy eating is not an easy task. We have been eating reasonably well, but it is tough to break old habits. I caved once in the past bit and grabbed Burger King for dinner for the family. This past Friday evening was beautiful and I really didn't feel like attempting some big meal. I had already had thaw ed some boneless, skinless chicken breast and thought that some sort of sandwich would be ideal. We had all the fixin's for a Greek Pita so that's what I did. I love my Wolfgang Puck Panini Maker and use it for almost everything including to grill chicken. I didn't add any seasoning... just threw them on two at a time. I got together all of the ingredients: Whole Wheat Pita Pockets, diced onion & tomato, sliced black olives, feta cheese and lettuce. So did this salad manage to keep you full all afternoon? I find that salads (but soup even more so) don't tend to keep me full until suppertime!
ReplyDeleteSurprisingly I did ok. I was keeping busy in the yard so my mind wasn't on eating, but by meal time again I was starving. It was delicious though!
ReplyDeleteOOOHHH...YUM! I love fruit in my salad! I'm sorry I didn't get back to you sooner, it's been a crazy couple of weeks...good crazy! I forgot to tell you about my large zucchini...well, I don't eat them plain that large. I use them in zucchini bread and such when they get that big. After every rain, I can count on getting a couple that big. Now my cucumbers, beans, and crowder peas are going wild! Take care!
