My Pinterest Inspired Asian Meal

This is a meal that we had last week that was entirely planned using Pinterest.  Thoe of you who know me well are well aware of my addiction to Pinterest.  Yes, addiction.  It has even been said that I need a Pin-tervention.  :)   I cannot help it though, I not only enjoy looking for recipe this way, but I have found it very helpful in meal planning.  I now even have weekly menu boards created on Pinterest to organize my weekly meal plans.  It has become a great tool.  So I guess you could say that this meal, in a small way, does prove that I actually do make recipes that I find on there. :)   Anyway, I was in the mood for a different kind of bbq meal so I choose to make Asian Grilled Drumsticks, Asian Cabbage Mango Slaw, Tricolor Thai Salad with Zucchini & Yellow Squash, and plain white rice.   Early in the day I put the salads together and because there were so many vegetables it involved a bit of prep work.  Plus l thought it would be a good idea to get the vegetables maridnading to allow time to soak up the flavors of the dressing.

Grilled Honey Mustard Chicken Ingredients 1/4 c Dijon mustard 1/3 c Honey 2 tbs Light Mayo 1 tbs Steak Sauce 4 Chicken Breasts (4oz ea) Directions 1. Preheat the grill for medium heat. 2. In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat. 3. Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning! Yummy Salad

Salad can get boring so today I got creative... romaine lettuce, a little ranch mixed in with the lettuce... then shredded cheddar, raspberries, grape halves, strawberry, and just a few almonds. A nice fresh salad for a warm day. Yum!

Panini & Potatoes

Now that we`re over the Easter break it`s time to hop right back on track. Monday I really didn`t feel like cooking a real meal so I opted for sandwiches. I made Turkey-Ham-Cheddar-Avocado Panini`s. Normally we`d have potato chips or french fries on the side, but I made smashed potatoes instead that I found on the back of 'Compliments Brand Red Petites Potatoes' Roasted Smashed Greek Potatoes 2lbs red mini potatoes 1 head garlic, peeled 4 sprigs oregano 2 tbsp extra virgin olive oil 1/2 cup crumbled feta cheese 1 tbsp fresh lemon juice Toss raw potatoes together with garlic, 2 sprigs of oregano, olive oil, saltand pepper in a roasting pan. roast in a 400 degree F oven until tender, about 40 minuntes. I can`t believe that I made potatoes without butter! And I can`t believe that they turned out tasty and overall was a ...
